Tomato Vodka Penne |

| Ingredients: |
1/2 pound 1 tbsp. 1 tbsp. 2 tsp. 3 2 oz 1/2 tsp. 1/2 cup dash 1/4 cup 1 1/3 cup 1 tbsp. handful |
Penne pasta Butter, unsalted Extra Virgin Olive Oil shallots, finely chopped cloves of garlic, minced pancetta, diced red pepper flakes (optional) Prince Igor Vodka Salt and pepper heavy cream tomato, diced or 3 tablespoons tomato sauce parmesan cheese, grated parsley, chopped spinach leaves |

| Instructions: |
1. Cook penne according to package directions. 2. Meanwhile, in a large skillet, over medium heat, melt butter. 3. Add shallots, garlic, pancetta and red pepper flakes. 4. Cook, stirring 3 minutes or until onion is soft. 5. Add vodka then bring to a boil. Simmer for 2 minutes. 6. Season with salt and pepper. 7. Stir in cream and diced tomato or tomato sauce and simmer until thickens, about 1 minute. Stir in cheese. 8. Add drained penne to skillet and cook, stirring until all pasta is coated and warmed through. 9. Plate and serve warm. Serves 2 |
