Seafood Fettuccine

Ingredients:
1 pound

1/4 cup
1 cup
1/2 tsp.
1/4 cup


Fettuccine
lemons - juice reserved and grate the rind
Prince Igor Vodka
Heavy Cream
Black pepper
Parsley, chopped
Asparagus, cooked and cut into peices
Scallops, cooked
Shrimp, cooked and cleaned
 
Instructions:  
1. Cook the Ferruccine 'al dente according to package
    directions.
2. Grate the rind of 1 lemon, then squeeze the juice out
    & reserve.
3. Combine the cream and vodka in a 10-inch skillet
    and simmer for 5 minutes or until the sauce thickens a little.
4. Add the lemon juice and rind to the sauce and cook for
    1 minute, stiring.
5. Add cooked scallops, shrimp and asparagus to the sauce.
6. Add the drained hot pasta to the sauce and toss.
7. Season with pepper, garnish with the parsley and serve
    immediately.
